Coriander Lime Brown Rice Recipe

We felt like adding a refreshing twist to our brown rice today, and so in goes some fresh coriander and a spritz of lime!

Coriander Lime Brown Rice Recipe
Vegan, Nut-Free, Refined Sugar-Free

Ingredients:
1 rice-cup of brown rice
2 limes
4 tablespoons coriander, finely chopped
2 tablespoon extra virgin coconut oil
1 teaspoon salt (we’re using pink Himalayan rock salt)

Steps:
1. Cook the brown rice (we’d recommend a rice cooker). For 1 rice-cup, fill the water level to the ‘2’ mark.



2. Meanwhile, zest the limes and squeeze the juice out.



3. Chop the coriander finely.

4. Once the rice is cooked, add in the lime zest, lime juice, coriander, extra virgin coconut oil, and salt.



5. Mix well!



Coriander lime brown rice, ready to be savoured! It goes absolutely well with a side of Tomato Eggplant Salsa too; will share the recipe soon =)
