Spicy Okra Stir-Fry

When you're one dish short for a full dinner spread, this vibrant, spicy stir-fry can gladly fill in the gap!


There may be no chilli in sight, but the heat of this dish comes from the generous amount of chilli powder and cayenne pepper it’s tossed in! 


Spicy Okra Stir-Fry
Vegan, Gluten-Free, Soy-Free, Nut-Free

Ingredients:
10 stalks of okra
1 onion
4 cloves of garlic
100g enoki mushrooms
½ tablespoon of chilli powder
½ tablespoon of cayenne pepper
½ tablespoon of turmeric powder
Extra virgin coconut oil
Salt (we’re using Himalayan rock salt)

Steps:
1. Start by slicing the okra, and chopping up the garlic and onion.


2. Heat some extra virgin coconut oil in a pan. Once it’s hot, begin sautéing the onion and garlic.


3. Add in the okra and stir fry.


4. Add in the enoki mushrooms and stir fry.


5. Add in the chilli powder, cayenne pepper, turmeric powder and salt; toss until cooked.



6. All done! How easy was that? ;)

  1. I do like okra - it's a tricky veggie to cook well though. I've had some dishes turn out a little 'slimy' while others are crisp and fresh.
