Pumpkin soup is probably one of the most satisfying things to have, and yet requires minimal effort to make! Here's how!
Ingredients:
half a medium-sized pumpkin
2 large Holland onions
7 cloves garlic
1 tablespoon oregano powder
1/2 tablespoon cumin powder
1 teaspoon turmeric powder
1/2 tablespoon cayenne pepper
yoghurt
salt & pepper
Steps:
1. Peel the skin off the pumpkin and cut into blocks.
2. Peel onions and garlic, chop roughly and add to the chopped pumpkin.
3. Boil the chopped items together. You can use chicken stock if you want some extra flavour. If you wanna keep it vegetarian, boiling them in water is fine.
4. Season with oregano, cumin, cayenne, salt and pepper. If you want, you could also add some turmeric powder to give the soup a vibrant yellow hue.
5. The pumpkin should start to soften after about 10 minutes on the stove. Shut off the flame, and with a serrated ladle, scoop out the pumpkin blocks, onions and garlic.
6. Place the boiled ingredients in a food processor and blend until smooth. If you prefer the soup to be more fluid, feel free to add in the stock from the pot into the pureed pumpkin until you achieve the desired consistency.
7. And, that's about it! Serve with a generous dollop of yoghurt, and great to have with fresh-out-of-the-oven toasts! =)
