[Video] Cous Cous Salad Recipe

In need of a quick side salad idea? Here we go!

Cous Cous Salad 
Vegan, Soy-Free, Nut-Free 

Ingredients:
500g mixed salad leaves
10 cherry tomatoes, halved
A handful of chopped coriander
30g cous cous
Sea salt and cayenne pepper
Hot water
20ml olive oil 
2 tablespoons of lemon juice 
1/2 teaspoon of finely chopped garlic 
Sea salt 

Steps:
1. Start with the cous cous in a medium-sized bowl. Season with sea salt and cayenne pepper. 

2. Cover with hot water that just about covers the surface.

3. Cover the bowl with a lid for about 5 minutes.

4. Once done, fluff the cous cous up with a fork.

5. In a large bowl, mix the salad leaves, coriander and mint.

6. Add in the cous cous to the salad bowl, and mix well. 

7. For the dressing, combine the olive oil, lemon juice, garlic and sea salt. Drizzle over the salad. 


Some ideas: you can have this Cous Cous Salad as a base for a more complicated salad, you can have it as a side, or you can use it to make our favourite packed lunch: the Eggplant Cous Cous Wrap (we'll get to that soon!)
